Matcha, like green tea, is produced from the camellia sinensis plant, but is grown differently and has a unique nutritional profile. Farmers grow matcha by covering tea plants for 20-30 days before harvest to avoid direct sunlight. This increases chlorophyll production, giving the plant a darker green hue. After the tea leaves are hand-picked, the stems and veins are removed, the leaves are ground into a fine powder known as matcha. Dried, shade-grown tea leaves are known as tencha.

Traditionally, grinding the leaves into a super-fine powder with granite stones takes quite a long time and the grinding process is done in the dark to preserve the nutrients they contain. Growing matcha this way also increases the beneficial compounds in the leaves. There are different grades of matcha. Matcha used as tea is of the highest quality.
